Start the day with breakfast in bed, serving spicy chicken livers with bread. For lunch, treat them to barbecue ribs and finish with a delightful ginger cake for dessert.

Spicy chicken livers
Ingredients
700g chicken livers, cleaned and trimmed;
Three tablespoons butter;
One diced onion;
Three garlic cloves, chopped;
One sliced red chilli;
One teaspoon smoked paprika;
Two teaspoons chilli flakes;
Two teaspoons cumin;
Two tablespoons tomato paste;
Two tablespoons fresh ginger, minced;
One teaspoon lemon zest;
Half-cup cream;
Half-cup parsley, chopped
Method
1. Rinse the chicken livers thoroughly. Place them in a bowl, cover with room-temperature water and add a tablespoon of lemon juice or vinegar. Let them soak for about 15 minutes, then drain and rinse again. Pat the livers dry with paper towels and season them with salt.
2. Heat butter in a large pan over medium-high heat. Fry the livers in batches until they are just coloured on the outside. Be careful not to overcrowd the pan. Remove the livers and set them aside.
3. Add a little cooking oil to the same pan. Sauté the chopped onions and minced garlic until they are soft and fragrant.
4. Add the fresh chilli, smoked paprika, cumin and chilli flakes to the pan. Season with salt. Stir well and cook for a minute until aromatic.
5. Stir in the tomato paste and cook for a few minutes, then add the grated ginger, lemon zest and a knob of butter, stirring until combined.
6. Return the browned livers to the pan. Cook for a few more minutes, stirring gently to coat the livers with the sauce. Finally, stir through the cream and fresh chopped parsley.
7. Serve the spicy chicken livers immediately with warm, crusty bread.

Honey and spice cakes
This recipe yields delicious, golden-brown cakes perfect with a hot beverage or fruit juice.
Ingredients
140g butter/margarine;
100g brown sugar;
100g honey;
200g self-raising flour;
One teaspoon mixed spice;
Two eggs, beaten;
Almonds or peanuts
Method
1. Preheat your oven to 180C (350F). Line your two 12-cup muffin or bun tins with paper cases.
2. In a saucepan, gently heat the butter, sugar and honey, stirring until the butter is completely melted. Remove the pan from the heat.
3. Sift the flour, then mix with the spices. Stir this dry mixture into the saucepan with the melted ingredients, then beat in the eggs and mix until you have a smooth batter.
4. Spoon the mixture evenly into the prepared paper cases. Place a few nuts on top of each muffin.
5. Bake for 20 to 25 minutes or until the muffins have risen well and are golden brown. A skewer inserted into the centre should come out clean.
6. Transfer the muffins to a wire rack to cool completely.
7. Enjoy your muffins with a hot beverage or fruit juice.
