Surprise your taste buds with these cheddar cheese and spinach scones.
THE recipe below yields eight scones and requires 80 minutes in preparation and baking time.
Ingredients
- 250g all-purpose flour;
- One tablespoon baking powder;
- Half teaspoon salt;
- 60g unsalted butter (chilled and diced);
- 150g sharp cheddar cheese (grated);
- One bundle spinach (blanched and chopped);
- One egg;
- 100ml milk
Method
- Whisk dry ingredients: In a large bowl, whisk together the flour, baking powder and salt.
- Cut in butter: Add the chilled, diced butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles fine breadcrumbs.
- Mix in mix-ins: Stir in the grated cheddar cheese and chopped blanched spinach until they are evenly distributed.
- Combine and knead: In a separate bowl, beat the egg and milk together. Gradually add the liquid to the dry ingredients, mixing until a soft dough forms.
- Shape and bake: Turn the dough onto a floured surface and shape it into flattened rounds. Bake at 200°C for 20 to 25 minutes or until the scones are golden brown.
