BIG BITE: Savoury cheddar and spinach scones

Surprise  your taste buds with these cheddar cheese and spinach scones.

THE recipe below yields eight scones and requires 80 minutes in preparation and baking time.

Ingredients

  • 250g all-purpose flour;
  • One tablespoon baking powder;
  • Half teaspoon salt;
  • 60g unsalted butter (chilled and diced);
  • 150g sharp cheddar cheese (grated);
  • One bundle spinach (blanched and chopped);
  • One egg;
  • 100ml milk

Method

  1. Whisk dry ingredients: In a large bowl, whisk together the flour, baking powder and salt.
  2. Cut in butter: Add the chilled, diced butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles fine breadcrumbs.
  3. Mix in mix-ins: Stir in the grated cheddar cheese and chopped blanched spinach until they are evenly distributed.
  4. Combine and knead: In a separate bowl, beat the egg and milk together. Gradually add the liquid to the dry ingredients, mixing until a soft dough forms.
  5. Shape and bake: Turn the dough onto a floured surface and shape it into flattened rounds. Bake at 200°C for 20 to 25 minutes or until the scones are golden brown.
