Carrot salad with ginger and soy

CARROTS are a very popular and versatile root vegetable, loved for their vibrant orange colour, crunchy texture and sweet flavour.

They are also incredibly nutritious, packed with vitamins and minerals. Carrots are an excellent source of Vitamin A, which is essential for healthy vision, immune function and skin health.

You can enjoy them raw or cooked in soups, stews, salads and even as juice. Here is a delicious and healthy carrot salad recipe.

Ingredients

Four large carrots, peeled and julienned;

Four minced garlic cloves;

One tablespoon fresh ginger, grated;

One tablespoon soy sauce;

Two tablespoons vegetable oil;

One tablespoon white vinegar;

One tablespoon sugar;

One teaspoon red pepper flakes;

One tablespoon sesame seeds;

Two thinly sliced green onions

Method

In a large bowl, combine the julienned carrots, minced garlic and grated ginger.

In a separate small bowl,
whisk together the soy sauce, vegetable oil, white vinegar, sugar and red pepper flakes until the sugar has dissolved.

Pour the dressing over the carrot mixture and toss well to coat everything evenly.

Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavours to blend. Before serving, sprinkle the salad with sesame seeds and green onions.
