THIS corned beef roast is easy to prepare and wonderful to eat. Plan to roast for about one hour per pound.
Ingredients
One (five-and-a-half pound) corned beef brisket with spice packet;
Seven small potatoes, peeled and diced;
Four medium carrots, peeled and diced;
One medium onion, diced;
Three cloves of garlic, chopped
Directions
- Preheat the oven to 150 degrees C.
- Place corned beef brisket in the centre of a roasting pan. Arrange potatoes and carrots around the sides, then scatter onion and garlic over the top. Sprinkle seasoning packet over beef, then pour in water until potatoes are almost covered. Cover with a lid or heavy aluminium foil.
