Delicious fish curry

HERE is a delicious and family-friendly fish curry recipe that is perfect for a flavourful meal.

In terms of curry level, the meal will be mild, making it enjoyable for everyone, including young children. You can adjust the spice level to your preference by adding more or less curry powder. This fish curry serves five people and takes approximately 50 minutes to prepare and cook.

Ingredients

One kilogramme tilapia fish fillets;

Four tablespoons fish curry;

One teaspoon turmeric;

Half medium onion, finely chopped;

One tablespoon garlic, finely grated;

One tablespoon ginger, finely grated;

One tablespoon brown sugar;

Half yellow pepper, cubed;

Half red pepper, cubed;

Half green pepper, cubed;

70ml water;

Coconut milk, one tin;

Chopped parsley for garnish (optional);

Four tablespoons oil;

Lemon wedges for serving (optional)

Directions

  1. Get all your ingredients ready. Cut the fish fillets into thick, bite-size pieces.

Gently pat the fish dry with paper towel. Drizzle two tablespoons of oil over the fish and gently mix until just combined.

  1. Season the fish with two tablespoons of the fish curry spice blend. Again, mix gently until all the pieces are evenly coated.

Cover the bowl and refrigerate for 15 minutes.

  1. In a large pot, heat the remaining two tablespoons of oil over low-medium heat.

Add the finely grated garlic, ginger and chopped onion.

Cook gently until fragrant and the onion turns a lovely golden-brown colour.

  1. Add the turmeric, brown sugar, water, coconut milk and the remaining two tablespoons of fish curry spice blend to the pot. Add the cubed yellow, red and green peppers, and mix everything well.
  2. Bring the mixture to a boil. Once boiling, reduce the heat to medium-low and carefully add the seasoned fish pieces.

Cover the pot and let it simmer for about five to eight minutes or until the fish is cooked through and the curry has slightly thickened to your liking.

Be careful not to overcook the fish, as it can become tough.

  1. Taste the curry for seasoning and adjust if necessary (you might want to add a pinch of salt or more curry for extra heat).

Just before serving, sprinkle with some               fresh chopped parsley (if using) and squeeze a little lemon juice over the top for a burst of freshness.
