Delicious goat stew

THIS is a twist on the classic goat stew with the addition of zesty lemon juice, some smokiness from BBQ sauce and a hint of mild curry powder.

This recipe takes the traditional flavours of a hearty stew and elevates them to new heights, creating an enjoyable dish. Serve with rice, steamed carrots and green beans.

Ingredients

One kilogramme super goat meat;

One teaspoon mild curry powder;

Three tablespoons oil;

One teaspoon salt;

One tablespoon finely grated garlic;

50ml lemon juice;

One medium onion, chopped;

Three medium tomatoes, grated;

100ml BBQ sauce;

One chicken stock cube;

400ml water;

Half tablespoon plain flour and enough water to make a paste (optional)

Directions

  1. Get your ingredients together. Cut the meat into medium-sized pieces and season with salt, curry powder and garlic. Rub gently to ensure the meat is evenly seasoned.
  2. Heat oil in a pot on medium-high heat. Add the meat and fry until browned. Add the lemon juice to deglaze the pot as you fry.
  3. Add the onion and fry for about two to three minutes. Add the tomatoes, stock cube and BBQ sauce. Allow to cook for five minutes, stirring regularly.
  4. Add the water, bring to a boil, then reduce heat to a gentle simmer until the meat is tender and cooked through.
  5. If the stew is not thick enough for your liking, you may add the water and flour mixture whilst stirring simultaneously. Allow the stew to simmer for a further five minutes.
