Easy way to cook tasty free-range chicken

BECAUSE of its nature, a free-range or roadrunner chicken needs more cooking time.

This will guarantee you a tasty and well-cooked dish.

Ingredients

Large pot;

One chicken cut into pieces;

50ml cooking oil;

Salt to taste;

One or two large tomatoes;

Chillies (two or three, or to taste);

One large onion;

Medium robot peppers (one of each);

Rosemary (optional);

Water or chicken stock

Directions

  1. Place the chicken in a pot with oil.
  2. Pour in two cups of water or stock and let it boil briskly. When you are done with the boiling, fry the chicken until it is golden brown.
  3. Add two more cups of water or stock and let it boil again and repeat step 2. Test for doneness and fry again.
  4. Blend the tomatoes, onion, robot peppers and chillies and add them in the pot. Stir them to your satisfaction.
  5. Put in the remaining water or stock and leave to simmer.

Serve with starch of your choice. Enjoy!
