Enjoy homemade Chinese spring rolls

Filling

500g beef, chicken or pork fillet;

500g bacon steak;

One teaspoon corn flour;

Half teaspoon salt;

One tablespoon white dry wine;

One teaspoon grated ginger;

One carrot, sliced into julienne thin sticks;

Half onion, sliced.

Preparation

1. Fry finely chopped bacon steak and meat and remove from pan.

2. Fry onions, grated ginger, and julienne carrot in the pan.

3. Add wine, salt and seasoning, corn flour to the pan.

4. Then add meat mix in the pan and let rest for 15 minutes.

Batter

Two cups sifted flour;

Two Eggs;

Two-and-a-half cups water.

Preparation

1. Mix flour, salt, water — add beaten eggs.

2. Heat oil in 7-inch pan, remove excess oil leaving about one tablespoon.

3. Cover bottom of pan with batter and turn.

4. Do not leave batter to brown or dry.

5. Place the batter on board, put one tablespoon of the meat filling and fold.

6. Dip in egg and coat in crumbs and fry in hot oil until they are golden brown for 3-5 minutes.

Dipping sauce

Two tablespoons apricot jam;

One tablespoon plum jam;

One tablespoon vinegar.
