Food safety workshop starts Thursday

Meanwhile, stakeholders in the tourism industry will on Thursday and Friday host a food and safety management training workshop in the capital.

The project is the brainchild of Travel Media Holdings and Afriskills Training Services, together with the Zimbabwe Tourism Authority, the Zimbabwe Council for Tourism, the Hospitality Association of Zimbabwe and the Catering Employers Association of Zimbabwe.

Mr Granville Van der Spuy – executive chair of the Academy for Food Safety and Quality Management of Cape Town, South Africa – will facilitate the training workshop.

Mr Van der Spuy is an internationally accredited professional trainer for technologies, processes and systems in industrial food safety, production, food safety audits, certification audits, allergen management.

He is also an environmental health practitioner.

“… this intensive programme seeks to enrich participants with cutting edge information about understanding and embracing global trends in conforming to the latest standard requirements of the Hazard Analysis and Critical Control Point System (HACCP) as prescribed by local and international bodies regulating food production and distribution.

“This workshop intends to serve as a guideline in the interpretation, explanation and implementation of the system in food establishment, food manufacturing, processing and distribution hence eliminate and reduce potential hazards,” said Travel Media Group in a statement last week.

Key areas to be covered include prerequisite programmes and legislation; facilities, layout, structure, equipment and maintenance; control of physical hazards; control of microbiological hazards allergen and chemical hazard control; cleaning and disinfection programmes; pest control storage of raw materials; control of suppliers; transportation; personal hygiene, handling practices and protective clothing; and bioterrorism and traceability.
