Homemade pork pie

Pastry Ingredients:
500g All-Purpose Flour
250g cold unsalted butter, cubed
1 tsp salt
1 egg (for egg wash)
1/4 cup ice-cold water
1 tbsp vinegar (optional)
Filling Ingredients
600g pork shoulder, minced
100g bacon, chopped (optional)
1 small onion, chopped
1 tsp white pepper
1 tsp mixed herbs or sage
1 tsp salt
1/4 tsp nutmeg
1/2 cup chicken stock
1 tbsp flour
Instructions:
Make the Pastry: Mix flour and salt. Rub in the butter until crumbly. Add ice water and vinegar, mix to form dough. Chill for 30 mins.
Prepare the Filling: Combine minced pork, bacon, onion, herbs, spices, flour, and stock in a bowl. Mix until combined.
Assemble the Pie: Preheat oven to 180°C (350°F). Roll out 2/3 of the pastry and line a pie tin. Fill with the pork mixture. Cover with remaining pastry, seal edges, and make a small hole on top. Brush with egg wash.
Bake: Bake for 40-50 minutes until golden. Cool before serving.
