Madeira fruit cake recipe you’ll love

INGREDIENTS:
• 2½ cups cake/plain/all-purpose flour
• 2 tsp baking powder
• ½ tsp salt
• 1 cup granulated sugar
• 1½ cups dried fruits
• 1 cup milk
• 3 large eggs
• 1 tbsp vanilla extract
• 150 g softened butter
• ⅓ cup canola oil
METHOD
• Soak the dried fruits in hot water for 5 minutes. Drain, then coat them with 1 tablespoon of flour.
• In a large bowl, sift together the flour, sugar, baking powder and salt. Mix well.
• Add the softened butter to the flour mixture and rub it in with your fingertips until the mixture resembles breadcrumbs.
• Make a well in the centre and add the beaten eggs, oil, vanilla extract and milk.
• Mix everything together. Don’t worry if you still see small lumps of butter they will melt during baking.
• Fold in the dried fruits.
• Pour the batter into a greased and floured baking pan.
• Bake in a preheated oven at 160°C until the cake is golden brown and a toothpick inserted in the centre comes out clean.
