Orange and carrot ice pops

THIS week, we are focusing on a refreshing, naturally fruity frozen treat with a vibrant orange colour — perfect for kids, parties or even a small food business.

Ingredients

Six medium fresh oranges (about 750g);

Three medium carrots (about 250g);

Two cups water (480 ml);

Half cup sugar (100g), adjust to taste;

Two tablespoons lemon juice (30ml);

One teaspoon ginger (5g), optional

Method

1. Wash, peel and chop the carrots into small pieces. Peel the oranges, removing seeds and excess white pith.

2. Boil the chopped carrots in one cup of water until tender, then let them cool completely.

3. Combine the cooked carrots, oranges, remaining one cup of water, sugar, lemon juice and ginger in a blender. Blend until completely smooth.

4. Strain the mixture through a fine sieve to remove pulp for a smoother texture, then taste and adjust the sweetness or acidity.

5. Pour the liquid into clean ice-pop bags or small freezer-safe containers, leaving expansion space at the top.

6. Seal securely and freeze flat or upright for six to eight hours or overnight until solid.

Food safety guidelines

Understanding harmful bacteria is essential for maintaining food safety, preventing contamination and protecting consumer health. A primary example is Clostridium botulinum, which is often found in improperly canned, preserved or vacuum-packed foods.

When ingested, it can lead to severe illness, with common symptoms including nausea, vomiting, abdominal pain and diarrhoea, along with neurological effects if left untreated.
