Rice in peanut butter

 

Rice rine dovi (with peanut butter) is very nutritious and so filling that you can have it on its own but we mostly serve it with green veggies and the traditional chicken stew.

Serves 4-5

Takes 25 minutes

Ingredients:

2 cups long grain rice

3 cups of water

1 cup milk

1 tsp salt

1 tbsp margarine

3 tbsp dovi

Rice: I recommend using long-grain rice.

You can also use medium or short-grain rice.

 

Brown rice would be great in this recipe but can be tricky to cook and needs a lot more water so tread carefully and stick to a brand you know and adjust the amount of liquid.

Peanut butter: Use high-quality peanut butter, the kind that has oil on top and is made with just peanuts.

Salt: Don’t put too much salt as the peanut butter is also salted.

First, rinse the rice very well, at least three times or until the water runs clear, and drain all the excess water from the rice. Add the rinsed rice to a medium pot.

Add salt, margarine and partly cover pot then bring to the boil. Reduce heat and let simmer until rice is cooked and water is finished.

When rice is cooked, fluff it up using a fork. Pour in a cup of milk (optional)

Add peanut butter and mix. You may use a wooden spoon. Add more peanut butter to suit your taste.

When thoroughly blended, cover pot and leave on the lowest heat for about 10 minutes to allow the peanut butter to cook.

Mix in again before serving.

You can serve your delicious peanut butter rice right away but I prefer to let it cool a little and eat it warm or at room temperature.

Adding milk will make your rice Creamy and nutty, this rice is the perfect for any main protein of your choice.
