SOFT, fluffy and buttery, a vanilla cake is made with simple pantry staples. No mixer and no stress — just mix, bake and enjoy! It is perfect for tea time, birthdays or whenever you are craving something sweet.
Ingredients
Two cups all-purpose flour;
One cup white sugar;
Three eggs;
Half cup vegetable oil;
One cup hot milk;
One tablespoon vinegar;
Two teaspoons baking powder;
One teaspoon vanilla extract;
Pinch of salt
Method
1. Preheat your oven to 180°C (350°F). Grease and line a cake pan with parchment paper.
2. In a large bowl, beat the eggs and sugar together until the mixture is light, pale and slightly frothy.
3. Stir in the oil, vanilla and vinegar. Sift in the flour, baking powder and salt, then mix gently until just combined.
4. Slowly pour in the hot milk, stirring continuously until the batter is smooth and well-incorporated.
5. Pour the batter into the prepared pan. Bake for 35 to 40 minutes or until a toothpick inserted into the centre comes out clean.
6. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
