Apple coleslaw with a difference

This lightened up apple coleslaw makes an easy, tasty side dish for cook-outs, barbecues, or dinner at home.

Lightly dressed, crunchy, a little tangy and a little bit sweet, this coleslaw is fresh, flavourful, and much healthier than most!

It’s quick and simple to make too. It’s our favourite slaw recipe at the moment, a yummy combo of fruit and veggies in a sweet dressing.

Ingredients

◆ 1 small chopped cabbage

◆ 1 unpeeled red apple, cored and chopped

◆ 1 unpeeled Granny Smith apple, cored and chopped

◆ 1 carrot, grated

◆ Half cup finely chopped red bell pepper (optional)

◆ 2 green onions, finely chopped

◆ One-third cup mayonnaise

◆ One-third cup brown sugar

◆ 1 tablespoon lemon juice to taste

Directions

  1. Combine cabbage, red apple, green apple, carrot, red bell pepper, and green onions in a large bowl.
  2. Mix together mayonnaise, brown sugar, and lemon juice in a small bowl. Pour dressing over cabbage mixture; mix until evenly coated. Let it chill in the refrigerator for 15 to 20 minutes and serve.
