Chinese chicken soup

This Chinese chicken soup with ramen noodles is spiced with turmeric, ginger and chile paste. A filling and delicious way to use leftover chicken.

Ingredients

Two tablespoons sesame oil;

Two teaspoons chopped fresh ginger root;

Two tablespoons chile paste;

Half teaspoon ground turmeric;

One pound chopped cooked chicken breast;

One-quart chicken broth;

One cup chopped celery;

Quarter cup soy sauce;

Two teaspoons sugar;

One (three ounce) package ramen noodles;

One cup shredded lettuce;

Half cup chopped green onion

Directions

  1. Heat sesame oil in a large pot over medium heat.

Add ginger, chile paste and turmeric; cook and stir until fragrant, one to two minutes.

  1. Stir in chicken, broth, celery, soy sauce and sugar. Bring to a boil; add noodles and simmer for three minutes.
  2. Stir in lettuce and remove from heat.
