RECIPE: Aunty Cathrine’s fluffy queen cake

Christmas season is around the corner and it means more guests and parties coming our way.
In times of bulk muffin baking, Aunty Cathrine Mukome has a very basic queen cake mix that is fluffy and made from scratch — they taste much better than supermarket queen cakes.
The quick recipe leaves more time to have some fun decorating with different icing with the kids.

Ingredients

200g cake flour;
150g castor sugar;
125g butter at room temperature;
125ml milk at room temperature;
One teaspoon of vanilla essence;
Two large eggs;
Half teaspoon of salt;
Two teaspoons of baking powder.

Method

Pre-heat oven to 180 Degrees Celsius and place 12 cupcake cups in a muffin tray.
Combine all the ingredients in a large mixing bowl and beat with an electric beater until smooth.
Divide the batter between the cupcake cups and bake for 20 minutes.
Remove from oven and cool.
