RECIPE: Lynn Maloney’s orange tea bread

During this festive season, take time to have some cake with friends and family.
This tea bread is budget friendly and is easy to make.

Ingredients

220g flour;
1ml baking powder;
Pinch of salt;
3ml cinnamon;
120g sugar;
60ml currants;
30ml margarine or butter;
80ml orange marmalade;
One egg;
125ml milk.
Topping syrup
60ml brown sugar;
30ml orange juice;
40ml orange liqueur.

Method
Preheat the oven to 180 degrees celsius.
Grease and flour a 22×9 centimetre loaf tin.
Sift flour, baking powder, salt and cinnamon into a large mixing bowl.
Mix in the sugar and currants.
In a separate saucepan, melt the margarine/butter and add the marmalade, egg and milk. Mix well.
Add the wet mixture into the dry ingredients to a smooth batter.
Pour the batter into the loaf tin and bake for 45 minutes.
Topping syrup
For the topping — heat all the ingredients gently until the sugar has melted. When the cake has cooled for 10 minutes, pour the topping over it.
