Simple frozen chicken stew

ON occasion, you find that you really want to cook chicken but it is frozen, so what do you do? This scrumptious recipe makes it possible to still go ahead with your chicken dish even if the meat is frozen.

Ingredients

One kg frozen mixed chicken portions;

Two tablespoons oil;

One teaspoon salt;

One-and-a-half teaspoon paprika (spice);

One medium onion, chopped;

Half medium green pepper, chopped;

Three large tomatoes, grated;

Three tablespoons BBQ sauce;

Enough water to cover the chicken

Directions

  1. Get your ingredients together. Put oil into a pot and add the frozen chicken pieces.
  2. Add salt and paprika. Fry on medium-high heat until the chicken begins to brown.
  3. Add the onion and green pepper. Fry for another three minutes.
  4. Add the tomatoes and BBQ sauce.

Mix and allow to cook for a further three to four minutes.

  1. Add the water, mix and close the pot. Bring to a boil, then reduce heat to a gentle simmer.

Simmer until the liquid is greatly reduced and the stew thickens. Taste for seasoning and adjust accordingly. Enjoy! — Zimbokitchen
