Soft, fresh buns for any time of day

 

Total cooking time 2 1/2 hours

Ingredients:

21/4 Bread Flour

125 ml lukewarm water

50g melted butter

1/4 cup milk powder

1/4 cup sugar

2 and 1/4 instant yeast

1 egg

pinch of salt

Extra 1/4 of flour for kneading or more if needed)

Method:

Weigh out all your ingredients

Melt the butter

Place the flour in a bowl

 

Add the, instant yeast, salt, sugar and milk powder, mix well

Add the egg and the melted butter then the water and combine.

Place a little bit of flour on a clean surface, place the dough, begin to knead.

 

You want to achieve a smooth texture, add flour as needed, you may not need that much. this should take about 10 minutes.

Rub a bowl with butter and put the dough, cover with Clingfilm.

Now allow to double in size by placing the dough somewhere warm.

 

I use my oven, I turn it to about 38 degrees Celsius.

Now allow to double in size, this can take up to an hour, be patient and allow the proving process to take place, it is really important.

Place flour on the surface and knock the air out of the dough and cut it into 12 equal pieces (about 55g as a guide) First cut the dough in half, from each half, cut into 6 pieces.

Roll the dough into balls, arrange them on a baking tray lined with greaseproof paper.

 

I use a 31.5cm X 20cm X 3.5cm tray. this gives my bake lovely edges.

 

You can still use a shallow one.

Cover the balls with clingfilm, this ensures that your dough will not have a crust when it is proving. place them back in the low-temperature oven or wherever you did the first prove.

 

Allow them to double in size, this takes between 30-40 minutes.

Remove the buns from the oven and keep them covered, turn the oven up to 180 degrees Celsius.

After about 5 minutes, place the buns in the hot oven and bake for 15 minutes.

In the meantime make a simple syrup by placing 1/4 cup of sugar and 1/4 cup of water in a small pan.

 

Whisk this on a low heat until the sugar dissolves.

 

Gently simmer until it is thick and sticky.

When the buns are ready, brush the syrup onto the buns and place them back in the oven for another 5 minutes.

Allow them to cool for about 5 minutes and enjoy them with your favourite cup of tea. – Online.
