THE humble cookie, adored in its baked form and often dreaded in its digital guise, has a surprisingly long and fascinating history. Far from being a modern invention, this treat has evolved dramatically, beginning as a simple test cake before becoming a global staple, only to be redefined entirely in the digital age.

The edible history of the cookie, or biscuit as it is known in some parts of the world, stretches back centuries. The earliest documented examples appeared in seventh-century Persia, shortly after sugar became widely available in the region.

However, the modern cookie’s origin lies in practicality. Bakers in the medieval era used a small dollop of batter to check the temperature of their ovens before committing a large batch of cake or bread dough.

This small, flat, quick-baking sample — the “koekje”, Dutch for “little cake” — was accidentally delicious, giving rise to the name we use today. The Dutch later introduced the koekje to America in the seventeenth century, where the term was anglicised to “cookie”.

From this humble beginning, the biscuit diversified across Europe. The British refined it into durable provisions essential for sea voyages and military campaigns, such as hardtack. Later, biscuits became a cornerstone of the famous British afternoon tea, leading to iconic varieties like the Digestive, Shortbread and Ginger Snap.

Across the Atlantic, an accidental stroke of genius changed the game in 1930 when American baker Ruth Graves Wakefield improvised by breaking up a chocolate bar into her dough, expecting it to melt.

Instead, the chunks remained intact, and the chocolate chip cookie was born, becoming arguably the world’s most popular biscuit. The Industrial Revolution then enabled mass production, making biscuits cheap and accessible, cementing their place as a daily snack worldwide.
