Blueberry streusel muffins

Bursting with juicy berries and topped with a buttery, cinnamon-spiced crunch, these classic blueberry streusel muffins are an irresistible morning treat.

EASY to whip up in under 30 minutes, they bake into perfectly golden, bakery-style gems with a soft, moist crumb. Pair one with your morning coffee for a simple slice of everyday comfort.

Ingredients

For the muffins

Two cups all-purpose flour;

Three-quarter cup granulated sugar;

Two teaspoons baking powder;

Half teaspoon salt;

Half cup butter, melted;

Two large eggs;

Half cup milk;

One teaspoon vanilla essence;

One-and-a-half cups fresh blueberries

For the streusel topping

Half cup all-purpose flour;

Quarter cup brown sugar;

Quarter cup granulated sugar;

Quarter cup butter, softened;

Half teaspoon cinnamon

Method

1. Preheat your oven to 180°C (350°F). Line a 12-cup muffin pan with paper liners.

2. In a large bowl, whisk together the flour, granulated sugar, baking powder and salt.

3. In a separate bowl, whisk together the melted butter, eggs, milk and vanilla extract.

4. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined — do not overmix.

5. Fold in the blueberries gently, setting a few aside to top the muffins later.

6. In a small bowl, combine the flour, brown sugar, granulated sugar, cinnamon and softened butter. Mix using your fingertips until coarse crumbs form.

7. Divide the batter evenly among the 12 muffin cups, filling each about three-quarter full. Press the reserved blueberries into the top of each muffin and sprinkle generously with the streusel topping.

8. Bake for 20 to 25 minutes, or until golden brown and a toothpick inserted into the centre of a muffin comes out clean.

9. Allow the muffins to cool in the pan for five minutes, then transfer them to a wire rack to cool completely.

People are a primary source of food-borne bacteria, making thorough hand-washing critical for anyone handling food. Unwashed or improperly cleaned hands easily transfer harmful pathogens to ingredients, prep surfaces and equipment. To keep food safe, hands must be washed thoroughly and frequently.

Hand-washing procedure

1. Wet hands thoroughly with clean water.

2. Apply enough soap to cover all hand surfaces.

3. Rub hands together, palm to palm.

4. Rub the back of each hand with the opposite palm, interlacing your fingers.

5. Rub palm to palm with fingers interlaced.

6. Interlock fingers and rub the backs of your fingers against opposing palms.

7. Clasp each thumb in the opposite palm and rub using a rotational movement.

8. Rub the tips of your fingers in a circular motion on the opposite palm.

9. Rub each wrist using the opposite hand.

10. Rinse hands thoroughly with clean water.

11. Use your elbow or a paper towel to turn off the faucet to avoid recontaminating your hands.

12. Dry hands thoroughly using a clean, single-use paper towel.

The complete process should take 15 to 30 seconds — roughly the time it takes to sing the “Happy Birthday” song twice.
