Simple fruit cake

IF you feel like having a baked goodie but dreading the time it takes to make one, then this fruit loaf is for you.

It will take just 45 minutes to prepare and bake.

You can have it with a hot cup of tea or cold beverage.

Ingredients

100g margarine/butter, softened;

100g castor sugar;

Two medium eggs;

200g self-raising flour;

One teaspoon baking powder;

One teaspoon caramel essence;

200g raisins;

50 ml fresh milk.

Equipment needed

Mixing bowl, hand mixer, sieve, measuring spoons and measuring scale.

Instructions

  1. Get all your ingredients together.
  2. Preheat oven to 180 degrees Celsius. Lightly grease your loaf tin and dust it with flour and set aside.
  3. Put the margarine, sugar and essence in a mixing bowl. Beat with hand mixer until light and fluffy.
  4. Add eggs and beat until just combined.

Sift flour and baking powder into a separate bowl.

  1. Take the flour and add it in two batches to the egg, margarine and sugar mix. Gently mix until just combined.
  2. Add milk and the raisins. Again, mix gently until combined. Do not over-mix.
  3. Pour batter into prepared loaf tin.

Bake in preheat oven for 35 minutes or until skewer comes out clean when inserted.

Wait for it to cool.
