THE free range chicken or road runner is one of Zimbabwe’s traditional and popular dishes.
Ingredients:
1 kg free range chicken (road runner)
2 medium onions, chopped
2 medium tomatoes, chopped
1 small pepper, chopped (optional)
4 tablespoons cooking oil
Salt to taste
2 tbsp. smooth peanut butter (250 g)
Extra water for the peanut butter sauce
Cooking time – 2 hours
Cooking instructions:
Get your ingredients ready and set aside.
Wash your chicken under running water and cut it into pieces and set aside.
In a medium sized pot, put your cooking oil and heat it, when your oil is hot, add half of your onions and fry, then add your chicken pieces, fry until it has a lovely golden brown colour.
Add water to cover all the meat and salt.
Close pot, bring to the boil then reduce heat to a gentle simmer for about 50 min or until the water is finished.
When the water is finished, add tomatoes, close the pot and simmer for about 10 min or until the tomatoes are well cooked, stirring occasionally.
You may add more water if the chicken is not yet cooked after the initial addition of water.
When the chicken is cooked, add the remainder of the onions and pepper and stir for about 2 minutes.
Add the peanut butter, stir until it’s incorporated into the tomato, pepper and onion mixture.
Add enough water to make a soup consistency that you’re satisfied with.
Stir gently until the chicken pieces are coated in the peanut butter sauce.
Close pot and allow to simmer on very low heat for 10 min, giving time for the flavour of the sauce to sip into the meat.
Check for seasoning and adjust accordingly.
Stir occasionally during this time to avoid it burning underneath.
