Vegetable sausage casserole

INGREDIENTS
n 1 tablespoon lemon juice
n 2 tablespoon olive oil
n 2 tablespoon crushed basil
n 1 can chopped tomatoes
n 1 green pepper de-seeded and roughly sliced
n 1 onion roughly chopped
n 2 mushrooms roughly chopped
n 4 white potatoes chopped into small chunks
n 300ml of hot vegetable stock
n salt and pepper to season
n pack of vegetable sausages (4-6)

Method
1 Add the oil to a large frying pan or wok, then add your chopped mushrooms, peppers, onions and potatoes, fry for 5 minutes.

2 In the meantime preheat the oven to 1900C

3 Once the vegetables start to soften add your hot vegetable stock and a tablespoon of basil along with salt and pepper. Stir in all ingredients and simmer for 3 minutes.

4 Now add your sausages in the oven for 5 minutes then turn the sausages and cook for a further 5 minutes.

5 Add the chopped tomatoes to the pan and stir in a final tablespoon of basil along with another small shower of salt and pepper. Take out sausages and chopp them into small chunks and add to the pan.

6 Add a dash of lemon juice and stir all the mix to ensure sauce is mixed with vegetable and sausages. Reduce heat and simmer for 10 minutes.

7 I had this on its own but due to the lovely sauce that this creates I believe it would be lovely with a choice of rice, mashed potato or a nice French stick.
