COOKING: Chef Tanya’s Italian chicken pasta

To get a taste of inspired dishes, we visited the Upmarket Farmers spread in Belgravia, Harare — held twice a week — Wednesday and Saturday from 9am to noon — and met the young Chef Tanya Crous of Easy Fast Meals.

Easy Fast Meals provides ready-made meals using ingredients that are locally produced and preservative-free.

The products make cooking easy without having to let go of the quality and taste of the food.

Chef Tanya shared an easy-to-make Italian chicken pasta, of which she says there is no better belly warmer for cold winter nights.

Ingredients: (Serves 2)

400g chicken breast, cut into strips;

375ml/ one bottle of Easy Fast Meals tomato pasta sauce;

350g of homemade Easy Fast Meals pasta or store-bought pasta;

One clove garlic, finely chopped;

One sprig rosemary, basil and parsley, each finely chopped;

Two tablespoons Extra Virgin Olive Oil;

Half-cup pitted olives (optional);

Salt and pepper (to taste).

Preparation

1. Heat a pot of water on a separate plate and add the pasta.

2. In a separate deep pan, gently heat the garlic, herbs and oil on medium heat (careful not to burn the garlic).

3. Add the chicken strips to the pan and turn the heat up to high until all the water in the pan evaporates.

4. Then add the Easy Fast Meals tomato pasta sauce and olives into the pan, and remove the pan from heat.

Cooking instructions

1. Add to the boiling water a generous sprinkle of salt then add the pasta and cook as per package instructions. (Cook for eight to ten minutes, until pasta is al dente — cooked to be firm to the bite).

2. Drain the pasta and remember to reserve 100ml of the pasta liquid.

3. Add the 100ml of pasta liquid to the pan with the chicken and sauce and return to the medium heat, toss through the pasta and sauce. Add salt and pepper to taste.

4. If you want a rich sauce that is decadent, add 100ml fresh cream and shavings of Parmesan cheese.

5. Serve with a simple green salad and fresh bread.
