Legendary nyimo, nyemba and nzungu

NYIMO, also known as bambara nuts, are an indigenous legume to tropical Africa. At the 2016 Traditional and Organic Food and Seed Festival at the Harare Botanical Gardens, many local foods were prepared and ingredients sold to guests. Here is one yummy legendary recipe.
Ingredients
One cup cowpeas (nyemba), shelled;
One cup bambara nuts (nyimo), shelled;
One cup groundnuts (nzungu), shelled;
One cup whole grain sorghum.
Directions
First soak the bambara nuts and cowpeas overnight. This helps to reduce their cooking time.
Boil them separately until they are tender.
Combine all of the ingredients and boil for 30 minutes.
For a twist, season and serve with a dressing of peanut butter mixed with lemon juice and chopped fresh chives or parsley.
