DRIED beef (chimukuyu) stew, a dish prepared from dried meat simmered in a rich peanut butter sauce, is a staple in many parts of the country.
Beef is traditionally dried using smoke and salt. The method infuses the meat with a unique depth of flavour.

Ingredients
500g to 1kg dried meat;
Salt;
Onion, diced;
Garlic, crushed;
Two medium tomatoes;
Two chillies;
Cooking oil;
Peanut butter
Directions
- Dice the dried meat into bite size pieces; you can soak it in water overnight. Wash it and dispose of the water.
- Put it on the stove or fire on medium heat. Boil until tender.
- Add salt and cooking oil, then fry until golden brown. At this stage, introduce the crushed garlic and diced onion. Fry until the onion is translucent.
- Put grated tomatoes and leave until the tomatoes are cooked. Add a bit of stock left over from the boiling and reduce heat.
- Mix your peanut butter in hot water and stir before adding it into the pot.
On low heat, allow it to simmer. Serve with starch of your choice. Enjoy! — bigbite
